My fruit pizza's (the real recipe this time)




I promised my own fruit pizza recipe, so here it is. The cookie recipe is from Land O Lakes, made with real butter, so it's gotta be good. So far, this is the best sugar cookie recipe we have tried. It should make 1 14" (roughly) pizza.


Cookie crust:

1 C butter softened
1 C sugar
1 eggs
2 1/2 C AP flour
2 T OJ
1 T vanilla
1 t baking powder

Cream:

8 oz cream cheese (softened)
8 oz Cool Whip (thawed)
1 T lemon juice
2 T powdered sugar

Spread the cookie dough on a 14" pizza pan (or cookie sheet if you have one big enough), bake at 400° for about 20 minutes, or until lightly browned. You want it to be a little soft but done. (You don't have to crimp the edges like in the picture unless you want to, that was my artistic wife). Let cool completely.

Beat the softened cream cheese for a minute or so until fluffy, add the lemon juice and powdered sugar, mix. Then fold in the Cool Whip (must be thawed all the way through). Ok, here's a disclaimer, I don't approve of Cool Whip...normally...but in some cases it works well. Spread on cooled cookie crust.

As you can see from the picture, we use kiwis, strawberries, blueberries,  mandarin oranges, raspberries...basically whatever looks good and is colorful. If we do use mandarins, or peaches, or pineapple, or anything in juice, they need to be drained very well.

Once it's all "purdy" warm some apple jelly and add a touch of water, then lightly brush it over the fruit. It keeps it moist and makes it shiny.
